She came out spectacular. With three hefty SCOBYs she might finish as early as next Wednesday.

Four cases of GABA bottled and now will sit 3-6 days for secondary fermenting. Tricky bit at present with the high variation in early Spring temps.

Mark (our site’s creator) and newest Kombucha fan inhaled a bottle of the Rose this am. The new 330ml bottle is the perfect guzzle down. Something worked as he roared leaving Te Pani.

Two large Yin Hao Osmanthus batches may need bottling tomorrow. With early Market that may make for a long long day. Good thing there’s nothing that a bottle of Earthwise Kombucha can’t fix.
